In today's amuse-bouche challenge, the chefs must harness all their creativity and express themselves in one small, tasty bite.
I'm so confused, but you know, whatever I do, I put my heart in it.
Creativity.
Every challenge, it seems like it's Sterling's first time in a kitchen.

All of a sudden, I stop, close my eyes.

I visualize my dish, and then I just go with it, and I'm usually spot on, so I'm the complete opposite of Roe.
I'm just using the heads.
I'm gonna go with the spot prawn and just rip the heads off, because my favorite part is sucking the head out.
For me, it's refined and elegant.

First thing I saw in our ingredients was this beautiful ahi tuna, so a quick sear on it.
I did a black garlic and ginger sauce under the bottom, finishing salt on top.
Unfortunately, what I just had was a mouthful of salt.

Some fried vermicelli, just for a garnish, just to show, with a pomegranate seed.
And some a little bit of wasabi caviar.
A lot of stuff going on there.

What I have for you today is a tuna, pan-seared, on a bed of Napa cabbage, sautéed with passion fruit.

This is exactly what we needed.
