You think of a certain dish, and it takes you back to a certain time of year or a certain time in your life.
When I say "turkey," we all think of Thanksgiving.

There are many holidays that are so identified with food, that the food is the centerpiece of the celebration.
Think of the most American holiday of them all, the Fourth of July.
Hamburgers, hot dogs, mac and cheese.
'Merica.
And there's the other holiday that I've come to love, think of tasty, vibrant Mexican dishes, like delicious enchiladas, chalupas, and tacos.
All of a sudden, I see the mariachi band come out and the dancers, and, "Uh I'll take un cerveza, por favor.
" If you've ever been to New Orleans in February, you very quickly fall in love with - Mardi Gras.

There's jambalaya, crawfish etouffee.

Now, for today's challenge, each team will be responsible for creating one stunning Fourth of July platter, one stunning Cinco de Mayo platter, and one Mardi Gras platter.
Each holiday platter should be made up of three delicious dishes.
