Welcome to Beverly Hills, specifically, The Belvedere Restaurant at the iconic Peninsula Hotel.
This legendary five-star hotel happens to be home to one of the finest restaurants in the country, a restaurant that today is being taken over by all of you home cooks.
- ( cheers and applause ) - All right.
Today you will be in charge of a dining room breakfast service for this hotel's extremely discerning guests.
Now, we need two teams.
Cate and Yachecia, you two performed the best during the previous lamb challenge, and today, you will each captain a team.
Come up and pick up your aprons.
Cate: I'm not a very aggressive person, I don't like telling people what to do.
It's not part of my nature.
I don't know how this is gonna go.
- So, Cate, quick question.
- Yes? Name one person that you wouldn't want on your team.
- Oh, I'm gonna go with Jeff.
- Interesting.
Jeff has a very loud voice, but he doesn't take direction.
He kinda just likes to be a little arrogant, and that's a quality I don't need on my team.
- Yachecia? - Yes, sir? One person that you wouldn't want on your team.
- Today it would be Jennifer.
- Wow.
Yachecia: I don't want Jennifer on my team because Jennifer cracks under pressure, and she's not refined enough for this type of challenge.
Today, the team captains are not in control of which teams you get.
That's gonna be in the hands of all of you remaining home cooks.
You want to work with Cate, stand single file right next to Cate.
If you want to be on Yachecia's team, stay where you are.

Jennifer: Yachecia said she doesn't want me on her team, but I want to prove her wrong.
She has this pre-notion that I'm dumb or that I don't have enough talent as others.
But I'm in this game and I'm growing every day and I'm learning every day.

Yachecia: Looking at my team, I think I have the underdog team.
I am 100% used to being the underdog.
So I know that we can work together and I can lead this team to victory.

There's just one more piece of information that all of you need, and that is the menu.

David: My personal favorite.
This is the potato waffle and lobster.
You want to under-poach the lobster just a hint, so when you heat it up, it doesn't become rubbery.

David: Classic American breakfast.
Two fried eggs, bacon, house hash browns.
- Wow.
- The final one, David, is David: Three egg omelette folded in with a little bit of garnish and a hash brown.

Eboni: I don't agree with the direction the captain is taking our team.
She's got me poaching eggs.
I could probably do two of these dishes by myself, and she's not utilizing anybody to the best of their ability.

Now, come on, guys, this is a tall order.
I mean, it takes weeks of training, shadowing other cooks before I even put any one of my cooks on the line.
Now, Red Team captained by Cate.
Aarón: Cate has very strong personalities on her team.
She has Daniel and she has Eboni.
Both have a lot of gravitas, but my concern with the Red is gonna be not enough soldiers, - Yeah? - too many leaders.
- Here's-- I got my-- - Lemons out of the way.
If we don't need the freaking lemons, get them out of the way.
Who's using this water? You using this? - Yes, I'm using that.
- Okay.
I think the Blue has got a big advantage.
They have age on their side and experience.
Get it prepped, that way we have it ready.
Gordon: They may not look the most dynamic, but I think you've got the stronger cooks in the blue this morning.

When you think about a place like The Belvedere at the Peninsula, you expect top-notch service, an amazing dining experience, and I have the same expectations today.
The Peninsula Hotel is really one of my most favorite hotels.
Although I live in Los Angeles, we love to come here.
The food is so outstanding.
And I'm really looking forward to seeing what these chefs are gonna do today.

I mean, like, it's beautiful and fluffy, but the seasoning was inconsistent.

We all go down with you, but instead of being able to pull us, you need to push us.

Are you both ready to find out what you're gonna have to make - for this pressure test? - Yes, Chef.

Eboni: Shucks.
I'm shaking for 'em.
Okay, tonight for your tough pressure test, you'll be cooking a dish that I grew up eating at least once a week.
To keep your place in this competition, you'll be cooking an incredible British classic-- fish and chips.
- Ooh! - Ow! Look at it.
Crispy beer-battered white fish with delicious thick cut chips with smashed fresh peas and finished off with that incredible homemade tartar sauce.
And because I do not want to hear any excuses tonight, I'm gonna show you how it's done.
- Please, watch carefully.
- Pay attention.
Now, behind a perfect fish and chips lies the batter.
This is an incredible beer batter.
Mix in the dry ingredients first.
AP flour followed by corn starch.
Salt, baking soda.
From there, mix that in gently.
Form a little well in the middle and very carefully add your beer.
Don't add all the beer at the same time, otherwise it's gonna cause lumps.
We want the batter to be thick enough to coat the fish beautifully.
And not too thin so as it runs off the fish.
Make it really nice and silky.
- You can smell that batter from there, right? - Mm-hmm.
It's got a nice, delicious richness to it.
Now, the secret is to let it rest.
- Got me? - Yes, Chef.
Now, the fish.
So how do we get the moisture out of there? We season the fish lightly.
It takes out any excess water.
To make sure the fish sticks to the batter, you run it through seasoned flour and then shake off any excess.
And you lay that inside your batter.
Let it sink and just coat the fish, and then very quickly get rid of the excess batter.
Let it coat and lay away.
Those filets of fish take 3 1/2 to 4 minutes.
The secret now is to get that batter nice and crispy - and beautifully seasoned.
- Mmm.
Now, the chips.
Potatoes peeled.
If they are cut evenly, they'll cook evenly, and all at the same time.
Get your fries straight into the fryer.
Crank the heat up.
You want those nice and crispy.
Now the way to identify when your fish is cooked, once that batter is coated, the fish starts to rise inside the fryer.
And if it starts to float, it's a strong indication the fish is cooked beautifully.
Let it rest.
Fries out of the basket into the bowl.
Smoked paprika salt.
Fresh chopped parsley into a bowl, and coat your fries.
And then take your cone.
Big tall ones at the bottom and fill up that cone with fries, making sure the fries are nice and crisp.
And then lightly season your fish.
And then up and over.
That is how you make a perfect MasterChef-quality fish and chips.
- Good luck.

We do fish fries all the time in church, but we don't batter fry.
We don't make fish and chips.
This challenge is all about timing.
The same reason I got here is timing, and so I gotta bring my A-game in order for me to get outta here and be safe.

- What are the pitfalls, Gordon? 'Cause this is not something that I grew up eating.
The key of a perfect fish and chips is in the batter.
- Yeah? - Lightly salting that fish to make sure you got rid of all that excess moisture and keeping that batter nice and crisp.
The secret, though, is to make sure that we get all those lumps out of that batter, blend it beautifully, and then let it rest.
That is really, really important.

They kind of seem to be in parallel worlds as far as where they are in the process.

Jennifer: I look at Yachecia's plate and my first thought is that her batter's definitely darker than how I would make it.
Her chips don't look as good.
She didn't cut them correctly, and they look a little limp.
So it's time for Yachecia to go home.
Yachecia: Jennifer's dish looks like it came from a fast food restaurant.
Mine looks like it came from Chef Ramsay's restaurant.

Okay, visually, that looks beautiful.

How long did you salt the fish for? I salted the fish for about 20 minutes and let it sit.

No color, finished frying them off, and seasoned them with smoked paprika sea salt.
You know, the fish is beautiful.

However, your fries are so thick.
When they're that thick, they get sort of soft and soggy.

And then I think the color on these chips are great, but when I look at the size of them, I would love to see better uniformity, because when you go to fry them, they're all gonna fry differently if they're different sizes, right? Yes, ma'am.
I think that your fish is absolutely the star.
I think your chips leave a little bit to be desired.
And peas fall just a little bit short for me.
