( cheering ) Boy: Whoa! Giant milkshake! - Oh, that's amazing.
- Milkshake? - Boy: Can I have one? - This Michigan boy is in the top 22 of "MasterChef," and I'm very thankful, because there's a giant milkshake in the kitchen today.
Both: Oh, my God! Sammy: It's huge.
That milkshake is bigger than my family's minivan, and our minivan is pretty big.
Gordon: Welcome back, everybody, to the greatest kitchen in America.
It's a kitchen that tonight has been given a makeover.
Or should I say, a milkover! ( cheering ) - Boy: Milkshakes are awesome! - I want that milkshake.
That's right.
Tonight's first big challenge is all about perfecting the American classic milkshakes.
- Oh, my God.
- But not everyone will be competing in this challenge.
- ( gasps ) - Oh, my gosh.
- Oh.
- What do you mean? For this challenge, we'll have three teams of three home cooks.
- Yes! - Christina: Now, in a moment, each of you will come up and grab a straw from Gordon and from Joe's milkshakes.
If you grab a straw with a color at the bottom of it, that means you're gonna be competing tonight.
Oh, my gosh! If you grab a straw with no color, you'll be heading up to the balcony.
You will be cheering on your fellow home cooks.
Now, all of you, very carefully come up - and grab a straw.
- ( kids screaming ) - I got yellow! - Oh, that is good.
I am really hoping I get a color, no matter what color.
I just really want to make milkshakes badly.
Yes, I got a color! - Red! - Is that a blue? - Red! - This is no color or it is a color? I'm hoping for a colored straw.
- Oh, that's yellow.
- And I'm hoping the other people in my group are good at cooking.
Red Team, Yellow Team, Blue Team, line up! - See you later! - Okay, teams, please, turn around, take off your white aprons, and put your team aprons on.
- Want me to tie yours, Quani? - Yes, please.

We're making a train.
My team is all guys, so we can all connect to each other very easily.
With a girl, we could be bossed around a little bit more.
Ladies are a little bossy sometimes, making you lose your A-game, and then you're gone.
All right, on the red team, we have Ben, Sammy, and Quani.
On the yellow team, we have Anthony, Olivia, and Henry.
And on the blue milkshake team, Gracie, Evan, and Pierce.
Now, a picture-perfect milkshake looks something like this.
- Boy: Yum.
- Christina: Creamy texture, whipped cream topping, and of course, - the perfect garnish - Kids: Cherry! Each team will have just ten minutes to make as many flawless, stunning milkshakes as possible.
Only a complete milkshake will be counted.
Now, the best two teams will enjoy the sweet taste of victory, - and will not have to cook in the next challenge.
- Yes! - But, there's something else.
- Good gosh.
- Not everybody will be safe tonight.
- Wait, what? - Oh, no.
- Including one judge.
That's right, tonight one of us is heading - straight into - The milkshake.
- that milkshake! - ( kids cheering ) Maria: Joe should do it! He barely has any hair! Right, now, please head to your stations.
Christina: At your stations you have everything you need to make us your MasterChef-worthy milkshakes.
Don't settle for anything less than the perfect milkshake.
- Gordon: Now, are you guys ready? - Kids: Yes, Chef! Your ten minutes start - ( whispers ) Now.
- Gordon: Now! - Let's go! - Let's go! I'll do the blackberry.
You go on mashing.
Get the milk and the ice cream ready.
Come on, guys, let's go! - Raah! - Christina: So, milkshake, you have four scoops of ice cream - One - A little bit of milk or heavy cream to thin it out.
- Did you put the milk in there? - Oh, the milk! The fruit shouldn't be lumpy, it shouldn't be chunky.
- Gordon: Come on, Quani! - Christina: And then of course, whipped cream piped beautifully on top, - nothing running over.
- It's dripping.
Garnish, straw, boom.
Work together, guys.
Henry, did you put any ice cream in there? - I put-- yeah, I put ice cream.

Our strategy in the yellow team is we're gonna make an assembly line.
Henry's doing mashing, Anthony is doing churning, and I'm gonna do piping.
Liv, make sure the piping is awesome! I will! We're gonna go slow and steady, and make the best we can, because that wins the race.
- We need strawberries! - I'll mash, I'll mash.
Gordon: Come on, Sammy! Our strategy is to get as many done as possible.
That way, even if some of them are bad - Ew, that does not look good.
- we've got so many that it could still be fine.
Gordon: Crank, crank, crank! Let's go! - ( Christina laughs ) - Ben, clean your hands! Quani: Although going so fast, this might get pretty messy.
- Three - We're in last place.
Hurry, hurry! Our strategy to complete this challenge is having the boys mashing the berries and blending up everything.
Make it faster, faster, faster! Me, I'm in charge of whipped cream Make sure it's silky smooth.

Joe: So the blue team, they're really putting a big push on now.
- Oh, my God! - Let's go, guys! Crank 'em! We should do two at a time, guys.
I think yellow team has done a great job of delegation.
They know Olivia has the finesse, the piping bag skills.
- Olivia, you're doing great.

They're not even talking together, and they're just working as individuals.

I think I did a pretty darn good job.

When Christina was saying they gotta be perfect We'll have to lose this one, guys.

- Olivia: We have the least, but ours look pretty good, compared to everyone else's.
It all comes down to the judges.
Joe has high standards, and he's also scary.
- Hmm.
- I'm starting to worry that we didn't make enough.
- Gentlemen.
- Sammy: We have the most milkshakes, but I'm not sure if all of our milkshakes are perfect.
Look at that, looks like a glass of cream.
Man, that is a messy one.
( sighs ) That's just, like, whole strawberries in there.
- Dear, oh dear.
- Sammy: To be honest, they're kinda ugly.
Will all three teams please come line up at the front? It's gonna be very, very close.

Joe: So that means the blue team or the red team will have to compete in the next challenge.
Blue Team, you scored seven perfect milkshakes.
Red Team you scored five, which means blue, you are safe.

" But it is a meal, it's everywhere in our town, and I'm really familiar with it.
I gotta take a bite of this.
Perfectly fried chicken, well-seasoned, with that crispy coating and incredibly juicy center.
- ( groans ) - And, come on.
Can't forget those wonderful waffles.
Nice crunch on the outside, but incredibly fluffy on the inside.
Both: I wanna eat it! You getting jealous over there? Kids: Yes! - Will you please stop? - ( kids groaning ) Oh, man.

- Christina: Mmm, it's perfection on a plate.
It looks so delicious! Gordon: All of you, listen carefully.
There are so many ways to prepare chicken and waffles.
We want to see some influence from your heritage or your signature cooking style.
For example, if I was gonna give this a British twist, I would put a little bit of spice in my flour, garam masala or turmeric - and make it slightly Indian.
- Mmm.
- Sounds really good.
- I love that.
If I were gonna give this sort of a New York twist, I'd take some pretzels, grind it down into a flour, and use that as the base of the waffles, and then maybe make a nice honey mustard butter on top.
- Ooh, yeah.
- Yes! Joe? Italian? - Come on.
- Kid: Meatballs? Joe: If I were gonna make it Italian, I'd throw it away and order a pizza.

Now, you'll each have just 45 minutes to cook us your take on chicken and waffles.

They're so sweet and yummy.
Got it! I'm gonna make a jalapeño and red pepper waffle, with a paprika and cumin-fried chicken, and just top it with a Texas gunpowder sauce, which is my made-up recipe.
It's really spicy and it's a little bit sweet.
Joe: So I'm so new to this whole chicken and waffle concept, like, I don't have a spin.
How do you spin this? For me, I'd take advantage of that buttermilk tonight and marinate it, to tenderize the meat.
It's in the coating.
That's the most exciting bit.
When I think about fried chicken, I think about spicy, - well-seasoned breading.
- Ben: Joe's crazy.
Who doesn't like chicken and waffles? For me, the beauty, as much as it is in the fried chicken is also in the waffle.
You can add personality.
You can take away some of the flour - and add cornmeal.
You can add scallions.
- Joe: Chocolate.
- You can add vegetables.
You can absolutely add chocolate.
- Chocolate? Really? You have to be thoughtful about what you're adding in.
Mikey, you're making those spicy.

Being from Florida, we have a lot of chicken and waffles.
I really wanted to put my own little twist on it.
I am making jalapeño and cheese chicken and waffles, breaded with chips.
I feel pretty confident.
Boy: Come on, Camson! So in Michigan, we don't eat chicken and waffles, but my grandma used to make fried chicken for me all the time.
So today I am making smoked paprika chicken with just a regular waffle, and I'm gonna do a cilantro whipped cream, so I'm just sorta going out of the box, so it sorta stands out a little bit.
In Georgia, chicken and waffles is really popular, because it's a Southern food.
I have it about once or twice a week.
If I went to a restaurant and they didn't have chicken and waffles, I'd be surprised.
I like using nuts a lot, so I decided to put walnuts and almonds in my waffles, with a spicy chicken, and my homemade maple syrup.
I definitely think it's gonna be a winning dish.

So you're kind of taking chicken and waffles and putting more of a gourmet stint on it with the mushroom sauce.

Quani: I made a spicy fried chicken with an almond and nut waffle.
And my own original syrup.

Why not just use regular maple syrup? Because I thought it would be better homemade because it'll taste sweeter and not from the store.

What's in it? Um, brown sugar, water, and cinnamon sticks.
So it's like a cinnamon sugar.
You know, this could make or break you.
That's either gonna be the icing on the proverbial cake or the anchor on your foot that takes you to the bottom of the lake.
You into taking those kind of risks? - Yes, Chef.
- You are? - You're a risk-taker? - Mm-hmm.

So, Quani, why make your own fake maple syrup? I thought it would be better homemade because it'll taste sweeter and not from the store.
You know, this could make or break you.

So, the maple syrup we give you is a natural product that comes from maple Trees.
So it's the sap of a tree, one of the most prized sugars in the world.
You made something with brown sugar and water that, quite frankly, is not as good as maple syrup.
It's a little bit watery, oversweet, it's not balanced.
Your waffle is a little bit dry.
The nuts make it even drier.
Chicken is burnt on the outside, although it's cooked properly on the inside.
So, I have to say, when you take something special and try to replace it with something that you're gonna make yourself because you think you're gonna be cutesy or a smarty pants and it doesn't really work out, well, then what happens? - It makes it bad.
- Gotta tell you, that's the way it is.

Now, what did you make us for your take on chicken and waffles? Cade: I made you a Cajun spiced fried chicken with a cornmeal waffle and my own bacon corn pepper salsa.
Now, based on the look of your apron, the spice in that fried chicken is some sort of chili powder, maybe some paprika.
What's going on there? I put all the Cajun seasonings in the flour, then I drudged it in milk and then put it in the flour.
Man, it's got a lot of flavor to it.

- The smoky nature of the bacon and the sweet-spicy nature of the peppers blends itself perfectly on those waffles.
I love the idea of putting cornmeal in.
It's a great riff off of your classic waffle recipe.

I don't know.
What do you make of this? It looks like you made 'em out of Play-Doh.
So, what's the flavor? Did you have any flavoring? Yes, Chef, I had strawberry in them.
And the chicken looks a little bit overcooked.
Is there any technique on the seasoning or fry I should know about? I used Cajun seasoning.
Strange, it's like the things you are telling me-- I'm listening to you, but I'm not tasting them in the dish.
Sometimes you get so enraptured with thehe aesthetic that you leave behind the fundamentals, which is the flavoring, because it's pretty bland.

Ben: I made chicken breaded with corn flakes and a blueberry waffle with a maple syrup whipped cream.
So, the guys told me that you were thinking about doing a white chocolate.
I was, but I thought about my fruit tart.
White chocolate pretty much killed that, so I didn't want to do white chocolate again.
The chicken is well fried, it's crispy on the outside.
- But the waffle is a bit underwhelming.

The blueberries don't necessarily lend itself, and I want the strawberries to just go away.

What's that? Moist, crispy chicken.

The actual waffle, you know, sometimes they can taste bland and boring, but you made yours spicy.

- What am I gonna say? My mushroom sauce is very powerful, has a lot of flavor, and I think it lifts the whole dish up.
