Las Vegas was exhilarating.

Honey, she is 63.
She's a retired showgirl.
[PAULA] I've wanted to be on
the stage forever. It's true.
Good times. I was very lucky.

Once a showgirl, always a showgirl.
- She's not retired.

- She is a forever showgirl.

[TAN] That's why we came to Vegas.
There's a showgirl that lives deep
inside of me waiting to come out.

This is me in my dressing
room at my dressing table.
The dressing room was the
the funnest place of all.

I was very, very fortunate to
be one of Engelbert's dancers.
[JONATHAN] "Paula hung up her
feathers and she became a mom
to her two daughters,
Briana and Summer."

She's extremely caring,
loving, kindhearted.
[SUMMER] She's down
for anything, really.
[BRIANA] She's the best.

I just am very appreciative of her.

They've been together for 14 years.

She just radiates this positive,
positive energy, this happiness.

I love being around the dancers
and the energy of the stage again.
Yeah, it's so exciting.
I'm very fortunate to still be involved,
yeah, in show business at my age.

She has to get past the stigma of
feeling like she's an older lady.

Sixty-three is certainly
not a young chicken,
but I'm not very old either, though.
So you kind of find yourself in
the middle of trying to figure out,
maybe, who I am right now at this age.
[JONATHAN] Paula's daughter Briana says
she's been dressing like
she's in her eighties
since she's been in her sixties.
- Whoa.
- I don't try much anymore.
And she just sees it.
- "As a seamstress "
- The '80s are back.
" Paula knows about
fit, form, and tailoring,
but when it comes to her own clothing,
she opts for comfort over fashion."
I like that because it's kinda
flowy. I would wear that out.

They don't go out much. He doesn't
really take her out too much.
But I think that she would like that.

We haven't been going out much
because we don't have
the money to do it.
We used to love to listen
to music at the dive bar,
at the Sand Dollar.
That's where we fell in love.

because it's definitely
dwindled in the last few years.

And I'm 14, and I'm

I've always wanted to be like a
showgirl. I become a different person.

that was, like, for your expression,
or was it always, like, for work?
- Well, I started having babies in my 30s.

And honestly, I think that's when
it all starts to

feel just looking at you?

The brow, for me, is
one of the things that

- And as we grow older

As we grow older, they thin.
And also, brows are really important
for the balance of your face.
Part of me wants to, like,
snatch, like, a high pony
and, like, literally just, like,
make Tan put you in a bikini
and, like, go to one
of those, like, pools.

and put it together.

sense that you're not going out,

holding you back from living life.

showgirl is a showgirl for life.
My mission is very simple with Paula.
I want to get back to
showgirl Paula, but for today.
Paula is full of life.
But I don't feel like she's
living through her space.
She just kind of lives in it.
My plan is to help to
pull out Paula's sparkle.
And I think we can elevate
her style, make it feel mature,
but not lose what brings her joy.
Paula has so much light and energy
and excitement over
literally everything.
I want her to be able to
apply that to food as well.
It's so much more than just
making a meal for her and Gregg
at the end of the day.
[JONATHAN] Because Paula was
a performer for so many years
and because part of her performance
was her aesthetic and how she looks,
my sense is she's a little bit burnt out
on having to do any glam at all.
And so really, I just
want to help her have fun.
[KARAMO] Just because
you're a grandmother,
just because you have a profession
that might keep you in the house
doesn't mean you got to stop living.
And if you still got
breath in your body,
that means there is still
trying and dreaming to happen.
And that's what I want
her to see this week.

compartmentalized who she is.
There's the performer she used to
be, who apparently was so happy,
and then there's the woman she is now,
who is still happy,
but has let a lot of that joy go.

to me about crystals in particular
is kinda the idea of intentionality
and everything having an intention.

could go around and decide
and pick some things.

Especially with your space,
right? This evolution.

I am surrounded by energy.

and energy and passion,

But the space that she's
living in does not reflect that.
What's really powerful about design
is that it articulates
who you are visually.

- You love some color.
- I'm on a color tour now because of you.

And to live in that kind of joy,
to live in that kind of
purpose can change your life.
And I think Paula's ready for that.
I think she just needs a little push.
What's the hardest part for you been?
You know, letting go of things in
the house 'cause I made that home.
So it's, like, the
physical manifestation
of all these different chapters.
And, like, sometimes I feel like
people aren't ready to
let go of those chapters.

- But I think there's a way to curate them.
Your house should have your past.
You've gotta leave room for the future.

So I came a little
earlier to set things up.

never seen such a kitchen.

There's a lot that you inspired me with
in the short amount of time we chatted.
- You mentioned how your mom
- [PAULA] Yes, and yes.
used to always incorporate at
least one vegetable in every meal.
Absolutely, yes.
So I thought, "Let's just focus on,
like, a vegetable situation for today."
I love it. I love it.
- Are you familiar with a meze platter?
- No.
[ANTONI] So a meze platter is basically
all kinds of different vegetables
and crudités and, like, little dips.
One of my very favorite things
in the world is called muhammara.
It's a very lovely dip.
And it has two elements
that I found in your kitchen.
- Walnuts.
- Okay.
- And peppers.
- [PAULA LAUGHS] Peppers!
Yep. Yep. Yep. Yep.
Yeah, I see what we're up to.
And so we're gonna go
ahead and chop things.
Then we're gonna assemble
everything on this platter.
[PAULA LAUGHS]
- Okay.
- First, we have your beloved red peppers.
Have you ever seen
them like this before?
- Roasted and skinned.
- Exactly.
So you can char these on your gas stove
so that the skin gets
really black and crispy.
And they get soft like this.
Then what you do is you
put them in a metal bowl.
Cover it with Saran wrap.
And that steam is gonna make
the skin separate from the flesh.
Ooh! Look at that.
So it comes off easily.
And then you just
basically take out the pith
and the seeds from the inside.
It's a different way of using something
that's already common in your kitchen.
I love learning how to do that.
So we're gonna put
all the ingredients in.
[PAULA] Okay.
[ANTONI] Perfect. Next up
- The walnuts.
- Brain food.
So then we have some
toasted breadcrumbs in here.
Aleppo-style chili flakes, paprika,
and then pomegranate molasses.
- Tahini, and some olive oil.
- And olive oil.

And then just to finish
it off, a tiny bit of oil.

that I would wait on every day

- And that honestly is a regret in life.

We used to say the

There are so many messages about the way

show up in the world as we age.

My mission is very simple with Paula.

My plan is to help to

but not lose what brings her joy.

my sense is she's a little bit burnt out

but she's gotten stuck in this rut
where she doesn't really
know who she is now.
We didn't talk about it at your home.
You don't typically
get gussied up anymore.

Like, for how long? How long's it been?
Hmm? Gussied? Wow.
Had to be when I was,
you know, dating Gregg.
- [TAN] Which was how long ago?
- [PAULA] Oh, we're 13 and a half years.

to me about crystals in particular
is kinda the idea of intentionality
and everything having an intention.

right? This evolution.

I am surrounded by energy.

and energy and passion,

But the space that she's
living in does not reflect that.
What's really powerful about design
is that it articulates
who you are visually.

- You love some color.
- I'm on a color tour now because of you.

And to live in that kind of joy,
to live in that kind of
purpose can change your life.
And I think Paula's ready for that.
I think she just needs a little push.
What's the hardest part for you been?
You know, letting go of things in
the house 'cause I made that home.
So it's, like, the
physical manifestation
of all these different chapters.
And, like, sometimes I feel like
people aren't ready to
let go of those chapters.

- But I think there's a way to curate them.
Your house should have your past.
You've gotta leave room for the future.

So I came a little
earlier to set things up.

There's a lot that you inspired me with
in the short amount of time we chatted.
- You mentioned how your mom
- [PAULA] Yes, and yes.
used to always incorporate at
least one vegetable in every meal.
Absolutely, yes.
So I thought, "Let's just focus on,
like, a vegetable situation for today."
I love it. I love it.
- Are you familiar with a meze platter?
- No.
[ANTONI] So a meze platter is basically
all kinds of different vegetables
and crudités and, like, little dips.
One of my very favorite things
in the world is called muhammara.
It's a very lovely dip.
And it has two elements
that I found in your kitchen.
- Walnuts.
- Okay.
- And peppers.
- [PAULA LAUGHS] Peppers!
Yep. Yep. Yep. Yep.
Yeah, I see what we're up to.
And so we're gonna go
ahead and chop things.
Then we're gonna assemble
everything on this platter.
[PAULA LAUGHS]
- Okay.
- First, we have your beloved red peppers.
Have you ever seen
them like this before?
- Roasted and skinned.
- Exactly.
So you can char these on your gas stove
so that the skin gets
really black and crispy.
And they get soft like this.
Then what you do is you
put them in a metal bowl.
Cover it with Saran wrap.
And that steam is gonna make
the skin separate from the flesh.
Ooh! Look at that.
So it comes off easily.
And then you just
basically take out the pith
and the seeds from the inside.
It's a different way of using something
that's already common in your kitchen.
I love learning how to do that.
So we're gonna put
all the ingredients in.
[PAULA] Okay.

- The walnuts.
- Brain food.
So then we have some
toasted breadcrumbs in here.
Aleppo-style chili flakes, paprika,
and then pomegranate molasses.
