It's been really difficult.
It's definitely not easy out there.
Announcer: But with so many candidates applying for each job opening, the odds are stacked against them, and the employer has all the power.
Something's wrong with your resume, you don't have enough experience.
It's just on and on and on.
Announcer: Tonight, everything changes.
Five candidates will attempt to win over their dream employer.
I'm from a small, small town in Idaho, so this opportunity would be out of my reach normally.
Announcer: But it won't be easy.
I don't need to know your sign of the zodiac.
You have your mom as a reference.
I notice that you're conversational in Spanish.
Uh, quiero es traba trabajar.
Announcer: If a candidate makes a good impression, they'll find themselves in a once in a lifetime dilemma because waiting in the wings are three other highly desirable companies who want to pounce and snatch up a candidate with a job offer of their own.
There's no way you're gonna get this job.
I'm officially offering you a position.

I'm gonna personally take you under my wing.

The palm is a fourth-generation, two-family owned and operated restaurant.
It is a leader in the fine dining industry.
We're basically in every major city in the United States of America, and tonight, we're gonna hire one assistant manager.
There's no better company than the palm to be with.
You've got a front row seat to have seen celebrities walk through your door.
It could be a movie star.
It could be a president.
It could be a famous athlete.
When you're an employee of the palm, we don't view you as an employee.

Hello, everyone, I'm Lisa ling, and welcome to the job.
We're coming to you from New York City, and the biggest issue here and across the country, we all know, is jobs.
The restaurant industry employs 12.
9 million people nationally.
That's 10% of the American workforce.
And tonight, five experienced and very qualified candidates will interview for a massive opportunity at one of America's greatest restaurants, the palm.
So please welcome, from the palm, co-chairman and co-owner, Wally ganzi.

And finally, executive vice president, Bruce bozzi Jr.
Welcome.

Bruce, why did you want the palm to be part of the job? Well, the palm has a strong tradition.
We've been going strong since 1926, so we're always looking for great, great talent to carry on the legacy and the tradition of our company.
And Wally, what is the position you're offering, and why is it such an important one to the palm team? Well, today, we're hiring for an assistant manager's position, and this job is so important because an assistant manager, in many cases, will be the first person that a customer will come in contact with.
So first impression's the key.
All right, it's time to meet our candidates.

My name is Anthony hollinrake.
I'm originally from Hawaii.
I currently live in California.
I'm the lead server for the restaurant I work with.
Oh, man, I bring a great passion for the food and beverage industry.
I love food.
I love service.
I love people.
I have great role models in my parents, my father being first and foremost one of the best role models a young man can have growing up, and this opportunity with the palm it'll allow me to, you know, make my parents proud and set a good example for my younger siblings.

My name is Maggie nachman.
I recently relocated to New York city to find my dream job.
I've been working in the restaurant industry for five years.
I've hostessed, I've bartended, I've waitressed, I've worked in all departments.
But there was one key factor missing, and that was the family.
So if you will please accept me, I want to give you my 110% dedication to your company.

Hello, everyone.
My name is Ryan pickett, and I'm from rigby, Idaho.
After my parents moved to the U.
S.
from Argentina, they decided to start a restaurant, and there I grew to love people, food, and service.
And loving the industry so much, I decided to start my own restaurant, and it went splendidly for three years, and then I was diagnosed with cancer.
And I was forced to sell out.
Now, I want to make a comeback, and what a better way to do it than a world-class family restaurant started by immigrants, similar to my parents' story.

But Ryan, how is your health now? - Two years cancer-free.

Next from Mountain Brooke, Alabama, jann Robinson.

Hi, I'm jann Robinson.
Roll tide.
I'm from Mountain Brooke, Alabama.
I'm an 18-year veteran of the food and beverage industry having owned my own restaurant and events and catering service, but my restaurant closed in 2002.
My husband was sick at that time, and after my husband died, I'm basically a single mother now.
So the palm is a good place for me to start over and move forward.

And tonight's final candidate, from Brooklyn, New York, Alex carabano.

My name is Alex carabano.
I'm from Brooklyn, New York.
I've been in the restaurant business for six years.
Actually, a vegan restaurant, uh, family-run.
I do everything in this restaurant from scheduling, inventory, dishwashing, waitering, whatever is needed to give the customers the best experience.
And I feel like I'm at a point where I want to take it to a higher level.
You know, I love the restaurant you guys run, and I would love to be a part of it and learn from you guys and to help your restaurant grow as well.

Alex, do you do you eat steak yourself? Do you eat beef or I do not, but, you know, I have no problem with people eating meat.
It's just my choice.
All right, thank you to our panel and our very impressive candidates.
Now, these five candidates were selected from thousands of applicants, and tonight, they'll compete for their dream job at the palm.
But just like in the real world, there's great competition for great talent, and it's time to reveal a big secret that we've been keeping from our candidates.
In addition to the palm, we've invited three guest companies to observe our candidates in action.
They're all from the restaurant industry right here in New York City, and later in the show, will have a chance to jump on a candidate that they themselves would like to hire.

Now, let's get down to business, and what better way to give the palm an opportunity to evaluate our candidates than to have them execute the actual tasks they'd be performing if hired? So let's see what happened during the candidates' trial by fire shift at the palm.

Hi, welcome to the palm.
We've got a very busy night ahead of us, so let's rock it out.
Tonight, you'll be responsible for the five different positions that an assistant manager would have.
This is a huge, huge deal, to have an opportunity to work at one of the most prestigious places in New York.
And I want to make the most of this because this doesn't happen every day for someone from a small town in Idaho.
The door is the most important place in the restaurant.
You also need to make sure to know your table numbers, and remember composure.
Never look stressed.
The next thing we're going to cover is wine service.
Whoever is gonna taste it, you want to just give them a small taste first.
You put the diffuser into the decanter.
Gives it a nice show.
Now, you always want to serve from the right side.
When they were going over the stations, my mind was ready to explode.
You want to serve from the left, clear from the right.
It's hard to learn everything in such a short period amount of time.
We're now gonna go to the back of the house.
At the palm, we call it the heart of the house.
The person at this station will be running food this evening, and don't forget, you are the last set of eyes before this plate is set in front of our guests.
Based on your performance tonight, only four of you will advance to the next phase.
The stakes are high.
One of us is going home.
I don't think it's gonna be me.
I'm looking at my competition And I don't feel intimidated.
I'm just gonna focus on me and what I have to do.

Is everything tasting all right? Janice wanted us to figure out positions.
So we decided Maggie will be working the front door greeting, jann will be seating the customers, Ryan would be working the floor with me, and then Alex will be expediting our food.

- Terrible.

And it's all happening in front of the company's top executives, Wally ganzi, Bruce bozzi Jr, and Janice sheil.
Now, before the break, we watched as Anthony, Maggie, Ryan, jann, and Alex were put on the floor as assistant managers at one of the palm's most popular locations right here in New York City.
Now, remember, one of our candidates will be eliminated based on how they handled this assignment, so let's see how it all went down.

You know, I feel really comfortable in the front of the house because people can see, like, "hey, you know, I can tell this guy anything.

I think tonight my chances are pretty good.

Well, Wally, Bruce, and Janice, how do you think our candidates did? Anthony and Maggie the transition at the door.
It's very important to pass information, so at one point you were passing the Baton.
Was there anything communicated between the two of you as you were switching jobs? Quite honestly, no.
Um We kind of just we were rolling with the punches that night.
I wish, you know, we didn't stumble on the owner's table.
That was a little intense.
Yeah, that moment was not a good moment.
- It was not at all.
- Not so much only because Wally is the owner.
Because in our eyes, anyone who walks in is a vip.
Anthony, I have a question for you about the way you were dressed that night at the restaurant versus the way you're dressed today.
I mean, you're dressed you look fantastic.
You look great.
[Laughs.]
Now, if the palm job was so important to you, why would you come in dressed like that? I didn't not come up with the intentions to, you know, not impress at all, and hindsight's 20/20.
If I could go back, I'd pick up a suit.
[Laughs.]
Maggie, you seemed a little challenged at the restaurant.
Can you tell me enlighten us on that a little bit? Yes, I it was a it was a challenge, and You know, it was just you're trying to focus on making people happy, and you're smiling, and you're at the computer, and you're trying to memorize table numbers.
You know, and there was people coming in through that door nonstop.
It like, there was just no break, and, you know, that just proves to me and, you know, and to your company that You're a very busy restaurant! And I wouldn't be I couldn't be more happy to to work there.
Jann, I'll tell you.
I don't know where you learned it, but you have "restaurant eyes," and that's a great compliment.
You were watching everything that was going on that I could see.

Alex, there's a lack of experience with fine dining that you bring to the table, and I think the wine service was a little awkward.
The bottle was open, you're picking up the glass, you know, kind of guzzle glug, glug, glug into the yeah, I definitely do not have a, uh, extensive knowledge or experience in wine and spirits, but I love to drink wine.
So that [Laughter.]
- That's a plus.
- I'm good with that one.

Ryan, you had an incredible presence 'cause I looked at you, and I thought, boy, this must be one of my new managers.
- [Laughs.]
- I-I really I forgot where I I am.

Well, we feel there's two that fall into this category at the moment, and, um it's Anthony And Maggie.
You know, Maggie, you were overwhelmed on the floor, at in the front.
Under pressure, you got flustered.
Anthony, you were certainly challenged in the dress, and, um and you were challenged at the door.
It's important in our business that you don't send them into the bar, you escort them.
But we feel that being overwhelmed and under pressure and not being able to sort of keep it together is something that we can't afford, so the person who will not be coming to work at the palm Is Maggie.
Oh, my gosh.
[Exhales.]
I'm just a little in shock right now, but thank you for the opportunity, and I will be dining at the palm, of course.
Um, I'm just a little shocked.

You've got some learning yet to do, but you seemed to express the desire to do that, which is great.

Um, Alex, your eagerness to learn, your attitude, your personality is great.
The wine is an issue.
We feel a little bit that it's a lack of fine dining experience that you'd bring to the table.
Ryan, your experience is an asset, and your confidence is an asset, and potentially, it might also be a little bit of a liability.
So the person who will not be coming to work at the palm Is Alex.

So Bruce, what would you say the most iortamp quality is that you're looking for in a candidate? Well [Clears throat.]
At the palm, it's all about family.
It's all about teamwork.
It's imperative to know who you work with, knowing people's names and their positions.
And I can't stress how important this is because, on a Friday night, when it's really busy, you can't say, "hey, you, uh, you know, I need my steak," or you need to know people's names.
Okay, so what is the test that you've come up with to test our candidates? All right, so tonight we have seven employees that worked with Anthony, Ryan, and jann at the palm.
We are going to ask them to name three and tell us the positions they worked that evening.

The position would be ultimately to get into management, but the most important thing for any managerial candidate would be to go through every station so they really know what it takes to work with us, so they really know what other people are going through in their day.
And so they really get to learn the culture of the place.
Bruce, what do you think about these developments? Anthony, you started off a little bit shaky in our eyes, and you've proven yourself just to be incredible.
So you have so much.

And so, Anthony, what provoked you to make this decision? The fact that it's a young company, and I'm I'm a young dude, and I'm ready to grow.
And I think I'm gonna probably make my dad cry, and then, um yeah.
It's why do you think you'll make him cry? I'm pumped! Well he's such such a good example for me.
I gotta live up to it.

So it's all come down to Ryan and jann, but only one of them will be offered a job at the palm.
Now, anyone who has ever been through a highly competitive interview process knows that you have to face some very difficult and unnerving questions, and that's exactly what our final two candidates are about to experience, because this is the final interview.
Bruce, Wally, Janice, once again the candidates are all yours.
Jann, this position at the palm would require you to move to New York.
Is it really possible for you to take your six kids out of school and move them into the city? Thank you for asking that question.
Um, yes, it is.
I have a wonderful support system.
I have great children.
Sacrifice it's no stranger to me.
But I believe working for the palm and being here in New York would be an awesome beginning for all seven of us.
Ryan You are a small town boy from Idaho.
Have you ever been to New York before, and are you really willing to move here? I have not been to New York, but I have lived in other large cities, and coming here and working, I'll be spending more time at the palm than I will at my house or my apartment or at the park.
Whether I'm in New York or Paris, that's my home.
All right.

This question is for both of you.
Each of you have been through very trying experiences.
How have these experiences influenced your professional aspirations? Having gone through my experience has made me a stronger person, a better sister, daughter, mother, woman in general to my community and to the world at large.
It's caused me to to fight, to pursue, to be an example for my children, but to just strive past the things that happened in life.
Things do happen, but you get up the next day, you put a smile on your face, and you persevere regardless.
Ryan? Cancer is an ugly thing, and fighting it, learning about people who survive and don't survive, it's so difficult.
And to me, it really made me value family.
Professionally, I want to be somewhere that I can have a family.
I still don't have one, and I want to make sure that my professional aspirations allow me to enjoy the important things in life: Family, friends, and good company.

This has been a very, very hard decision for Janice and Wally and myself.
This has been a great opportunity for us, sitting here on the job, getting to know you.
We never would have met anybody like you in the normal sort of structure of how we post a job and recruit.
Um, I just want to say, you know, the strength and weaknesses that you that you bring to the table the weaknesses are so small.
I mean, you're both really incredible.
So, that being said, the person who will be coming to work for us at the palm in New York City has been the front-runner really from the beginning.
And that person is Jann.
